Kale w/ Creamy Avocado Dressing

Ingredients

  • Avocado (1large or 2 small)

  • 1 cup olive oil

  • Juice from 1/2 a lemon

  • 2 garlic cloves

  • 1 tbsp stone-ground mustard

  • 2 tbsp nutritional yeast

  • 1.5 tbsp apple cider vinegar

  • Salt & pepper

  • Toppings: baby tomatoes, bell peppers, nutritional yeast, protein of choice

Directions

  • Add all ingredients to a blender and mix well. Option to add more olive oil, ACV, and nutritional yeast for consistency and taste.

  • Top with baby tomatoes, bell peppers, and protein of choice

  • Option to add walnuts, almonds, or hemp seeds

  • Sprinkle with nutritional yeast
