Kale Salad with Creamy Avocado Dressing (So Easy, So Nourishing)

Let’s be honest—salads can feel a little underwhelming unless they’re actually satisfying. This one checks every box: creamy, tangy, nourishing, and surprisingly filling.

The dressing is made from avocado, olive oil, lemon, and garlic—aka heart-healthy fats and anti-inflammatory ingredients that support energy, digestion, and blood sugar balance. Top it off with a few colorful veggies and your favorite protein, and you’ve got a go-to meal that’s as functional as it is flavorful.

Ingredients:

For the Creamy Avocado Dressing:

  • 1 large (or 2 small) ripe avocados

  • 1 cup olive oil

  • Juice from ½ a lemon

  • 2 garlic cloves

  • 1 tbsp stone-ground mustard

  • 2 tbsp nutritional yeast

  • 1½ tbsp apple cider vinegar

  • Salt & pepper, to taste

Topping Ideas:

  • Baby tomatoes

  • Bell peppers (sliced)

  • Nutritional yeast

  • Walnuts, almonds, or hemp seeds

  • Protein of choice: grilled chicken, hard-boiled eggs, tofu, or chickpeas


Directions:

  1. Add all dressing ingredients to a blender or food processor.

  2. Blend until creamy and smooth. Taste and adjust for acidity or consistency—add more ACV, oil, or nutritional yeast if needed.

  3. Massage dressing into chopped kale (or other hearty greens) until leaves are softened.

  4. Add your toppings: chopped veggies, protein, seeds, and an extra sprinkle of nutritional yeast.


💡 Mandy’s Tip:

Massaging the kale with your hands after adding the dressing helps break down the tough fibers and makes it easier to digest (and more enjoyable to eat!).

This dressing also works great as a dip or spread for wraps!
