Homemade Vegan “Cheese” Sauce w/ Grain-Free Gnocchi

If you are craving a cheesy comfort meal, I’ve got you covered! I have been feeling extra creative in the kitchen lately, and really wanted to make a “cheese” sauce made from vegetables.

Give my creation a try :)

Ingredients:

  • 2 medium sweet potatoes

  • 1 large carrot

  • 1 can of full-fat coconut milk

  • 4-6 tbsp of nutritional yeast (add more or less based on flavor preference)

  • 2 garlic cloves

  • 2 tsp of turmeric

  • 1/2 tsp thyme

  • salt and pepper

  • 2 boxes of Cappello’s Gnocchi

Directions:

  • Bake whole sweet potatoes at 400 degrees for 45-50 minutes, or until soft.

  • Add the carrot (drizzled with a little olive oil or coconut oil) to the pan after sweet potatoes have been cooking for about 20 min.

  • Boil water for the gnocchi.

  • Let potatoes and carrot cool for about 10 min, then remove the skin from the potatoes and place them in a blender with the carrot. Add coconut milk a little bit at a time until you blend to a desired consistency.

  • Add the garlic, nutritional yeast, turmeric, thyme, salt, and pepper and blend again.

  • Add gnocchi to water once it boils and follow directions on the box.

  • Once gnocchi is done, place it in a bowl and top with sauce. Sprinkle with thyme and pepper and enjoy!
